The firm one. The Sovereign is for sleepers who want a properly firm, supportive surface, and it gets there without memory foam: a layer of pressure-relieving reflex foam on each side of a pocket sprung core, with the springs sealed inside solid foam walls so the support runs edge to edge. Reflex foam is dense and responsive, it pushes back to support you rather than cradling you in, and it sleeps noticeably cooler than memory foam because it does not wrap around your body.
The mattress is dual sided, with reflex foam and quilted panels on both faces. Flip it and rotate it regularly and the wear spreads across two full sleeping surfaces, keeping the mattress firm and supportive for years longer than a one-sided build. The deep quilted soft fabric gives the surface a bit of loft and comfort straight through the firmness, durable enough for years of flipping.
The pocket springs beneath move independently, so support follows your body shape and a partner's movement is kept to their side. And because the springs are encapsulated, there is no roll-off at the sides: the whole surface is usable, right to the last inch. Hypoallergenic fillings and materials are used throughout, fully conforming to British fire safety regulations.
This is a firm mattress, and you sleep on it rather than in it. Bear in mind firmness feels a little different depending on your weight and build. Approx 8 inches deep.
